ÖkoTrans
The ÖkoTrans project (= organic farming in the context of social, economic and ecological transformation processes) is investigating transformation processes to increase the proportion of organically produced food in out-of-home catering. In order to analyze the potential of the AHV in BW as a sales market for regional organic food and the complex interaction of the stakeholders involved along the value chain (including agriculture, distribution and logistics partners, processing companies, canteens), the regional value chains of organic agriculture are modeled. In close cooperation with the stakeholder groups involved, key barriers are identified that are currently hindering the expansion of organic farming in BW and the distribution of regional organic food in the AHV. Based on these findings, possible solutions will be developed together with key players from the field and new business models will be designed that can promote organic farming in Baden-Württemberg.
